
CHICKPEA BURGERS
Using Garlic Tahini Sauce

Ingredients:

2 15 oz cans organic chickpeas, drained and rinsed

½ med-sized red onion, diced small

1 red bell pepper, diced small

2 cloves garlic, minced
-
2 stalks green onion, thinly sliced

1 TBLS avocado oil or olive oil

1 tsp ground cumin
-
1 tsp paprika
-
½ tsp pepper
-
1 tsp salt
-
¼ tsp chili flake (optional)

¼ cup chickpea flour or flour of your choice
Instructions:

Heat half oil in a large sauté pan over medium heat. Sauté red onion and red pepper for 3-5 mins until vegetables are lightly browned. Add garlic and toast for one minute. Remove from heat and add to a food processor.

Place all ingredients into a food processor (alternatively, use a potato masher). Process until everything is incorporated, making sure not to over-process. The mixture should still be somewhat chunky and not too smooth. Taste the mixture and season with additional salt if necessary.

Pro tip: Place the mixture in the fridge for 30 mins to make handling easier.

Use a 4oz scoop and form patties with hands.

Heat the other half of the oil in a large sauté pan over medium heat. Cook patties for 5-7 mins each side until there is a golden brown crust on each side.

Alternatively, cook chickpea burgers in the air fryer at 400 degrees for 20 mins, flipping halfway through. Lightly spray the inside of the air fryer with oil to prevent sticking.

Prepare your meal prep dishes with your favorite sides and a serving of Chickpea Burgers over the top. Allow dishes to cool in the refrigerator before adding a lid.

Yield: Makes approximately 8 - 4 oz patties
