FIRE CRACKER TOFU

Using Thai Almond Sauce

As we embark on the exciting journey of 2024, we're thrilled to continue the culinary adventure with Chef Rajiv's second meal prep masterpiece. But before we dive into the tantalizing details of Fire Cracker Tofu, did you know that tofu, our star ingredient, is a versatile plant-based powerhouse?

 

Tofu Tidbit:

Tofu, also known as bean curd, is a fantastic source of protein, often referred to as the "meat of the plant world." Derived from soybeans, it's rich in essential amino acids and packs a nutritional punch, making it a stellar choice for those seeking a plant-powered protein boost.

Cook Time: 20 mins

 

Ingredients:

  • 1 block extra firm tofu, pressed and patted dry with a cloth

  • 2 tsp sesame oil (or oil of your choice)

  • 3 TBLS corn starch or arrowroot powder

  • 1 clove garlic, minced

  • 1 tsp ginger, minced

  • ¼ cup low-sodium tamari or coconut aminos for a gluten-free option

  • ¼ cup water

  • 1 tsp sriracha or chili garlic paste

  • 1 TBLS maple syrup

  • Salt and pepper

  • Toasted sesame seeds (optional)

  • Plant Bomb Thai Almond Sauce

 

Optional Sides:
Brown rice, Quinoa, Cabbage and red pepper slaw, Steamed vegetables

 

Instructions:

  • Preheat oven to 425 degrees.

  • Strain, press, and pat the tofu dry. Cut into ½ inch cubes. In a large bowl, toss tofu with oil, and season with salt and pepper.

  • Coat tofu with cornstarch (hold back 1 tsp for slurry) and toss until cubes are evenly coated. Place tofu on a lined baking sheet and bake for 20 mins, flipping halfway through. Tofu should be golden brown with a crisp crust on the outside.

For the Sauce:

  • In a small saucepan, combine tamari, water, ginger, sriracha, and maple syrup. Bring to a light boil.

  • Combine 1 tsp cornstarch with 1 tsp water in a small bowl creating a slurry to thicken the sauce.Once the sauce comes to a light boil, whisk in the slurry mixture. The sauce should thicken before your eyes. Turn off the heat and allow the sauce to rest.

  • Remove the tofu from the oven, place in a large mixing dish, and pour sauce over the top. Gently mix with a spatula until all pieces are evenly coated. Sprinkle sesame seeds on for added flavor and texture.

  • Prepare your meal prep dishes with your favorite sides and a serving of Firecracker tofu over the top. Allow dishes to cool in the refrigerator before adding a lid. Finish with a healthy drizzle of Plant Bomb Thai Almond Sauce. Now, your delicious dishes are ready to take on the go for the week to support your health journey!
